DECLOUET HIGHWAY BEEF TONGUE
2 small beef tongue or 1 large,
24 oz. water
Stuffed and seasoned with:
1 bunch chopped green onions
12 oz. chopped onions
4 Tbsp. cooking oil
12 oz. chopped bell peppers
1 1⁄2 tsp. Cajun/Creole Seasoning
15 oz. chicken broth seasoning
1 1⁄2 Tbsp. beef base
In heavy pot, brown tongue in oil until very brown (25 minutes).
Add onion and bell pepper and saute until soft.
Add chicken broth and saute until a paste forms.
Add water, beef base, and Cajun/Creole seasoning.
Cook on low heat for 3 1⁄2 hours, stirring every once in a while.
Add green onions, turn off fire, and stir.
Serve over cooked Louisiana rice.
