LOUISIANA RICE HARVEST BROWN GRAVY
5 lbs. seven steak or shoulder steak
3 tbs. cooking oil
2 1/2 tsp. Cajun/Creole seasoning
2 tbs. beef base
24 oz. vegetable (onion, bell pepper, celery, garlic)
32 oz. water
1 bunch chopped green onions.
Add cooking oil to hot pot.
Place meat in pot and brown, turning to ensure a dark brown color on all sides.
Season with Cajun/Creole seasoning a couple of times.
Remove meat and add vegetable blend, saute until soft and some browning occurs.
De-glaze with beer, or water and stir to dissolve brown bits on bottom of pot.
Return meat to pot and season with Cajun/Creole seasoning.
Add water and beef base, stir, cook on medium heat for 1 1/2 hour, stirring
every once in a while.
Turn off heat and add green onions.
Serve over cooked Louisiana rice.
