SAM HOUSTON JONES JAMBALAYA
3 lb. marinated pork
3 Tbsp. beef base
1 lb. rice dressing mix (fresh)
64 oz. water
32 oz. chopped vegetable blend (onion, bell pepper, celery, garlic)
1 bunch green chopped onions,
1⁄2 bunch chopped parsley,
12 cups cooked Louisiana rice
24 oz. chicken broth
6 Tbsp. cooking oil
In large, heavy pot, brown marinated pork on high heat along with 3
tablespoons oil for 10 to 15 minutes.
Add dressing mix and continue to brown for 5 minutes.
Add vegetable blend and saute until vegetables are soft.
Deglaze with chicken stock.
Add beef base and water.
